What's for Dinner?

I have heard of a lot of people making Panini's on a George Foreman grill but we had never tried it. I wasn't really sure what to do so I read through a bunch of different recipes and then made up my own version from those, so everything I did is definitely open to changes!

They turned out SO good. Randy said this might be his new favorite meal.

Panini with Pesto Spread

Ingredients:
White bread
Butter
Pesto
Cheese
Deli meat
Tomato
Avocado
Spinach

Lightly butter one side of each slice of bread. Spread pesto on opposite side of each slice then put on cheese, meat, tomato, avocado, and spinach. Place sandwich butter side down on grill. Cook both sides until crispy and hot.

*I used country white bread from a local grocery store and provolone cheese. I used deli chicken breast which tasted really good with the pesto, but next time I will probably do just veggies on mine because I think that would be really yummy. The pesto is a pretty strong flavor, so for me, I don't think you need to use a ton. Just enough to cover the bread. It worked perfectly to cook on the George Foreman!

  3. love this! target has a great pesto spread in their refrigerated section and it's super yummy on their artisan bread too! love it when new recipes work out.
